Vegan Coconut Cacao Sunbutter Cups



These snack cups are high in protein, free of refined sugar, easy to make, and so yummy!

Vegan Coconut Cacao Sunbutter Cups
Adapted from The Honour System's recipe here.

Makes approximately 8-9 cups

Ingredients:
1 1/2 cups sunbutter, I used smooth
1/3 cup unsweetened shredded coconut + more for the top
2 tablespoons maple syrup
2 tablespoons hemp seeds
1/3 cup coconut oil, melted
1/4 cup cacao nibs, I use Navitas Naturals

Instructions:
Mix up the sunbutter, coconut oil, 1/3 cup shredded coconut, maple syrup, and most of the cacao nibs (save a few for sprinkling on top). Line a muffin tin with paper liners and pour into cups. Sprinkle the tops with the hemp seeds, extra shredded coconut and cacao nibs. Freeze for about 20-30 minutes to set. I stored mine in the freezer to keep them from melting. Enjoy!

Preschool Activity: Bringing Books to Life // The Beeman

I love the idea of making stories come alive and helping kids learn with hands-on activities. I hope to make this a recurring feature here on the blog :) Today's book was The Beeman. It is about a beekeeper and it explains the different types of bees and their jobs. We had honey sticks as our snack and we made a honeycomb and bees. diy simple hanging succulent garden


I had a pretty hanging basket that held a flowering plant last year that sadly didn't make it due to the harsh sunshine and heat blasting it all summer...and I may not have watered it as often as I should have :/ I really liked the basket so I decided to reuse it and this time plant some succulents in it because I've found they do well on my front porch in the desert-like environment :) This is a simple project that takes about 20 minutes to complete.

What I Wore // Pieces of the Weekend

This past weekend we hit the city and did some shopping at one of my favorite children's consignment stores to stock up for spring. We also stopped by one of our favorite cafes for some dinner. The weather had cooled off again, which was refreshing...It's back up to the 80s now but it was nice while it lasted haha!

What I Wore // Date Night

My mom is in town visiting and offered to watch Little A so hubby and I could go out to dinner alone. It was such a nice treat... We went to a restaurant we hadn't tried before and the food was outstanding. I got a locally brewed lager and scallops with toasted farro, herbs and blueberry sauce; hubby got grouper and we shared a Madagascar vanilla creme brulee with strawberries and an aged balsamic sauce. Afterwards we went and hung out at the bookstore for awhile like we used to do in our pre-child days haha...it was nice to catch up on some magazines and just relax :)
